Such an incredibly helpful post! I've recently been experimenting and have had two flops from hazelnuts being too darkly roasted. Who knew?!
glad it was helpful! but about those hazelnuts: did you roast them, or were they roasted when you bought them?
I roasted them myself 🥴 They are delicious on their own, but a little over-roasted once ground into butter. It was a first crack at it, so next iteration will be a lighter roast.
